The steam condensing lid captures the steam created during boiling and converts it back into a liquid using a misting nozzle. This prevents steam from condensing in and on your which can create mold problems. During the boiling process 1-2 gallons of liquid is boiled off and will condense in your brewing space. Think of splashing a gallon of wort all over your brewery; it’s essentially the same thing.
